just in case you have beautiful tomatoes(down here they were not so beautiful-and on the wane), check out the extraordinary cookbook from chef Edna Lewis & Scott Peacock, The Gift of Southern Cooking. the BLT Salad is sublime.
ALL you need for the Salad: 1 head iceberg lettuce, 8 slices good quality bacon, 4 slices white loaf bread, 4 large ripe tomatoes-cored and cut into 1 inch pieces, kosher salt and freshly ground black pepper, 1/3 to 1/2 cup Mayonnaise (I suggest Duke's)

I think I discovered Edna's recipes about 20 years ago. It's where I learned the term 'leaf lard'.
ReplyDeleteThe book looks wonderful, Gaye. And, what a beauty Edna is. I like any salad with bacon. My tomatoes did pitifully this summer and they are my favorite garden vegetable/fruit. They should each cost about $50. for all the care, cost and coddling I did, to no avail.
ReplyDeleteI made Miss Lewis' Okra Pancakes on Sunday night and they were delicious! Every recipe I have tried in this book is wonderful.
